I really enjoy Italian food, so I'm always excited to try new Italian restaurants. Being hyper-acidic, I give plus points to establishments that can come up with dishes that doesn't use tomatoes. I don't know what it was about Mamma Mia, but they seemed to know my plight, so we were served some of their best sellers that didn't use tomatoes, and every thing he had were EXCELLENT!
Mamma Mia is one of the newest restaurants at Uptown Place Mall at Bonifacio Global City. With the kitchen spearheaded by Italian national, Chef Salvatore De Vincentis, their goal is to transport you to Italy through it's rustic dishes that uses authentic techniques and ingredients in its creation.
As soon as I walked in, I saw this glorious Valoriani Oven in the open kitchen, and I immediately knew Mamma Mia is a restaurant that takes its pizzas, and Food in general for that matter, VERY SERIOUSLY.
ANTIPASTI
As a lover of cheese, I found the Baked Brie with Fried Onions and Fresh Mushroom to be nothing short of excellent. The smooth, creaminess of the Brie worked wonders with earthiness of the mushrooms, with the fried onions giving a nice play on textures.
I don't mean to belabor the obvious, but the Italian Bacon and Meatballs Bombs (P375), was my kind of appetizer. Delicious ground meat rolled up, and wrapped in smokey bacon? YES PLEASE. The dish comes with a side of Spicy Marinara sauce, however I preferred it as is, letting the natural flavor of the meats shine instead.
PIZZA
Mamma Mia's pizzas are ridiculously awesome. What makes their pizzas stand out from the rest is their insane pizza crusts, which has four types of cheeses, namely Tallegio, Mozzarella, Marscapone, and Cream Cheese kneaded into it, making sure every bite has an extra oomph of creaminess.
The Crema di Tartufo con Prosciutto Crudo (P585) was incredible. The pizza was topped with a rich Truffle Cream Sauce, Egg, thin slices of Prosciutto and even more mozzarella cheese for an extra kick of gooeyness.
Just when I thought I was going to eat nothing else but Crema di Tartufo con Prosciutto Crudo for the entire meal, they plopped down the Mortadella e Pistachio (P595) in front of me, and once again, I was absolutely floored.
Every slice of the pizza has a piece of Mortadella, which is a thinly sliced Italian Luncheon Meat, and the pizza is drizzled in a luscious Pistachio Cream Sauce, then sprinkled with crumbled Pistachio bits.
It sounds like a rather unconventional pairing but I assure you it was one of the finest pizzas I've ever had the privilege of tasting.
PASTA
As I mentioned earlier, I am hyper acidic, so I therefore usually stay away from tomato based dishes. That usually means any Pasta with red sauce is off limits. The delight I had on my face when they brought out the Spaghetti Carbonara ala Mamma Mia (P365 solo / (P1,350 for sharing) was like that of a child seeing his gifts from Santa Claus for the first time on Christmas Morning.
This Carbonara was done the authentic way, and it was incredibly creamy, with touches of smokey Bacon and sharp Pancetta smartly added to avoid it becoming too cloying. A sprinkling of Parmesan Cheese and Black Pepper over the Egg Spaghetti brings the flavors together, making for an outstanding gastronomic experience.
You wouldn't think you'd find one of the best Crispy Pata dishes in the metro at an Italian restaurant, but the Stinco di Maiale (P1,450) is exactly that. A finely seasoned Pork Hock is deep fried to utter golden perfection, and served with two dips.. A soy sauce based one that caters to the Pinoy Palate, and a rich gravy that Chef Salvatore intended it to be eaten with. I personally preferred the gravy, because its light creaminess went well with the savoriness of the Pork meat.
After your meal, you can choose to cleanse your palate something from Mamma Mia's selection of homemade Gelatos! Flavors rotate, however you can explain favorites such as Vanilla Bean, Dark Belgian Chocolate, Salted Caramel, Cookies and Cream, Strawberry and Pistachio.
From Pizzas to Pastas and even succulent meat dishes.. Mamma Mia blew me away with it's bold take on Italian food!
We truly enjoyed an amazing feast prepared by Chef Salvatore De Vicentis, and with it's beautiful ambiance and mouthwatering food, I think Mamma Mia has quickly become one of the must try restaurants in Metro Manila!
